BANANA NUT CAKE

2/3
c shortening or butter
1
2/3 c sugar
1
ripe banana
2
eggs
2/3
c buttermilk
1 tsp salt
1 1/4 baking powder
1 tsp baking soda
2 1/2 c flour
1 c walnuts or pecans
Cream
shortening and sugar.
Add
banana, eggs and milk.
Add
salt, powder, soda, flour and nuts.
Bake
350 degrees for 35 minutes.
Frost
with cream cheese frosting.
CREAM CHEESE FROSTING
1/2 cup butter
8 oz of cream cheese
3-4 cups powdered sugar
2 tsp vanilla
a splash of milk
Whip the butter and cream cheese together.
Slowly add the powdered sugar until desired thickness and sweetness.
Splash in the vanilla and milk.
Top with Pecan Pralines
PECAN PRALINES
1/2 c sugar
1/4 c water
1/2 c pecans chopped
In a small saucepan, dissolve the sugar into the water.
On Medium-High heat, boil the sugar water until it turns golden in color.
Quickly stir in the pecans and pour onto a greased sheet of foil or wax paper.
Allow to cool and then break apart into clusters.
Sprinkle on top of your cake.
