Pizza Crust

I have tried for five years to find the perfect pizza crust recipe.
And they were all just, well, you know, mediocre.

Enter my sister, Michelle.
After she clued me in on a super easy recipe,
and a personal hands-on tutorial,
my husband took one bite and said, "You've done it!"

MY SISTER'S PIZZA CRUST

1 1/4 c warm water
1/2 tsp sugar
1 T yeast
1 T olive oil
1 T honey
1/2 tsp salt
3 cups flour
olive oil and garlic for garnishing

Add yeast to the warm water and sugar and let it get foamy and warm.
Add oil, honey, and salt.
If you have a Kitchenaid, use your bread hook to stir in the flour.
Knead for about 5 minutes.
The dough should be a little sticky,
but still pulls away from the side of the bowl.
THIS DOUGH DOES NOT NEED TO RISE!
Good news eh?
You can immediately dust your counter with flour
and roll out the dough.
You can make 2 LARGE pizzas,
or 3 MEDIUM pizzas.
After you've rolled the dough into perfect circles,
brush all over with olive oil and sprinkle with garlic.
Then add sauce, toppings, and cheese of your choice.
Bake at 400 degrees for 10-12 minutes.
Until crust is golden.

Now, I have a pizzas stone, so I need to preheat my oven to 500 degrees,
and have it heat up for thirty minutes before cooking a pizza on it.
After thirty minutes, I turn down the oven to 400 degrees.

My sister uses a metal pizza pan with holes in the bottom.
Her crust gets more crispy than mine does.

Either pan makes a great crust.

Shown here is a medium pizza
topped with olives, spinach, mozzarella, and Classico Pizza Sauce.
