Fruit AND Veggie Day!
Today was fabulous.
I was much less cranky than yesterday.
I literally gorged myself today with fruits and veggies.
I never felt hungry.
Besides the basics of apples, oranges, watermelon, plums, and strawberries
{yes I ate them all}
I also got creative with baked cinnamon apples, and honey vanilla peaches.
We had salads with balsamic vinaigrette, vegetable soup, and salsa.
Dinner was a feast with half a spaghetti squash piled with peppers, zucchini, mushrooms, and onion sauteed until it was so carmely and delicious, I hardly noticed that there wasn't sauce.
These were my favorites from the day.
These peaches were divine!
I will make them again even when I'm done with this detox.
I took two peaches and sliced them.
I put a 1/2 T of butter and rubbed it all over them.
Then I sprinkled allspice very lightly over the top.
And drizzled a light layer of honey.
Most importantly, I splashed pure vanilla extract generously over them.
I baked them for about twenty minutes on 400 degrees.
My house smelled unbelievably good.
Then the peaches has made a little syrup in the bottom of the pan.
So I dipped them in it.
I mean all it needs is a little frozen yogurt and you've got a great treat.
WithOUT sugar.
{besides the frozen yogurt}
Anyway, I was very satisfied today.
I have way more energy.
I naturally woke up before 7 am, which is unheard of for me.
{I'm not much of a morning person, wink wink}
I'm enjoying being more creative with my options.
It makes this an adventure.
Tomorrow I get to stuff myself with bananas and milk!
