Richard, I'm sad to say, never had the fortune of knowing any of his grandparents. They have to be great people, because his parents are great people. So when I found a cookie recipe from Janet {Richard's Aunt} from Fern Hill {Richard's maternal grandmother} I couldn't wait to try it.
{Are we clear on all the family connections here? Need a pedigree chart?}
Anyway, here's the recipe.
It's delicious.
As all Grandma's cookies do.
Fern's Rocky Road Cookies
1
3/4 c flour 1/2 c shortening
1/2
tsp baking soda 1 c sugar
1/2
tsp salt 1 egg
1/2
c cocoa 1/2 c milk
1
tsp vanilla 1/2 c nuts
12
big marshmallows {or 36-48 little ones}
Sift
together the flour, soda, salt and cocoa. Set aside. Cream together
the shortening and sugar. Beat in the egg. Add the flour mixture and
cream together. Add milk, vanilla, and nuts. Bake 375 degrees for 8
minutes. Take out of the oven and put a big marshmallow on each
cookie. Bake for 2-4 more minutes. Top with chocolate frosting.
Chocolate Frosting {good for brownies too!}
1/4 c melted butter
1/4 c Hershey's cocoa
1 c powdered sugar
2 1/2 T evaporated milk
Mix
well and pour over marshmallow brownies while warm or cool.
