Aunt Janet's White Chili

Aunt Janet is my mother-in-law's little sister,
she is my neighbor, 
and she is a wonderful cook. 

Any recipe I can scam out of her, is priceless.

This is her delicioso White Chili.
It's easy, fast, and filling.

AUNT JANET'S WHITE CHILI

2 T olive oil
1 lb ground chicken sausage*
1 medium onion chopped
2 tsp garlic, finely chopped
3 cups chicken broth 
2 – 15 oz cans great northern beans
1 – 4 to 5 oz can green chilis
2 medium zucchini chopped**
1/8 to 1/4 tsp cayenne
1 tsp cumin
1 1/2 tsp oregano
1/2 c shredded Monterrey Jack cheese
sour cream & cilantro for serving

Drizzle a warm pot with olive oil.
This will be the same pot you make all the chili in, so make it a big one.
Saute the ground chicken, onion, zucchini and garlic over medium heat until no longer pink.
Add all remaining ingredients except cheese and bring to a boil.
Reduce heat to a simmer; cover and cook for 10 – 12 minutes.
Remove from heat and stir in cheese until melted.
Garnish with sour cream and cilantro.

*When I made this, I used Apple Smoked Chicken Sausage. I highly and fervently recommend it. The flavor was unbelievable. 

**I also just use whatever veggies I have on hand. Zucchini, red pepper, green pepper... it's all good.
