2 cups cooked quinoa
2 large eggs
1 c shredded carrot
2 stalks green onion
2 cloves minced garlic
1/4 c chopped fresh cilantro
1/2 c parmesan
2 T flour
1/2 tsp salt
1/4 tsp pepper
Mix all the ingredients well.
I recommend using a spoon and not your hands.
Quinoa is small and sticky and will get everywhere with your hands.
Use a cupcake pan or a mini cup cake pan and
spoon the quinoa mixture into the cups.
Bake 350 degrees for 15-20 minutes.
Makes 12 cupcake sized cakes
or 24 small cupcake nuggets.
