Baked Taquitos


BAKED TAQUITOS

3 boneless chicken breasts
1 T pepper
1 T celery salt
2 cloves garlic
1/4 small yellow onion
about 6 cups water

Cover the chicken breasts in water in a saucepan.
Add pepper, salt, garlic, onion and simmer for 30 minutes,
or until chicken is cooked through.
Let cool and shred or cut into strips.
{and you might want to freeze the broth, if you like doing that}

1/2 c butter divided
12 corn tortillas, warm
1 c grated pepper jack cheese {or cheddar, if you are a wussie like Colette}

Preheat oven to 450 degrees.
Take 1/4 cup butter and put into a 9X13 pan and put into the oven.
Let sit until butter melts.
Like with German Pancakes.


Meanwhile take warm tortillas and put a small portion of chicken and a small sprinkle of cheese down the middle.
Roll up tightly without ripping the tortillas.
Repeat 12 times.

Remove the pan from the oven with the melted butter.
Carefully place the tortillas in the pan, seam down, without burning yourself.
Take the remaining 1/4 cup butter and melt it.
Brush the melted butter generously over the top of the tortillas.

{someone needs to clean their oven door!}

Bake in the oven for 20-25 minutes until the tortillas are crispy.
If you like, you can turn them halfway, but when I tried, they only fell apart,
so it works without turning them too.

Let cool for about 10 minutes on a pad of paper towels.
Serve with Salsa, Sour Cream, and Cholula.

My kids and husband LOVED THEM!
