Butterscotch Pudding Cookies

When Richard and I were first married, I was trying to drop hints to him for things I like and I said,

"White Chocolate is my favorite kind of chocolate."

And he quickly said, "Butterscotch is my favorite kind of scotch."

So whenever I want to get on Richard's good side, I made something with butterscotch in it.

Well, I saw this recipe on Pinterest from the Sunday Baker for chocolate chip cookies using PUDDING!

I immediately thought to myself, with all the flavors of pudding that exist why would you make boring old chocolate chip cookies?

Trying to impress my butterscotch loving husband, I took the recipe and made BUTTERSCOTCH PUDDING COOKIES!


I'm not talking about the butterscotch hard candies in the bottom of your grandma's coin purse.

I'm talking fluffy, warm, gooey, make-you-smile butterscotch.

Here's my take on the recipe.


BUTTERSCOTCH PUDDING COOKIES

3/4 c butter
3/4 c brown sugar
1/4 c sugar
1 pkg {3.4 ounces} Jell-O instant butterscotch pudding
2 eggs
1 tsp vanilla
1 tsp baking soda
1/2 T baking powder
2 1/4 c flour
1 bag Hershey's butterscotch chips.

Preheat oven to 350 degrees.
Cream the butter with the sugars until fluffy.
Add the Jell-O.
Mix in the eggs one at a time.
Add vanilla, baking soda, and powder.
Slowly add the flour.
Stir in chips.
Bake at 350 degrees for 7-8 minutes.
