Anjala, my beautiful sister-in-law.
During our Christmas vacation one afternoon, I mean morning,
she baked us a delicious breakfast.
I inhaled it so fast that I choked on powdered sugar.
The secret recipe comes from Kate and William's royal wedding!
Yeah, not that one...
I was thinking more like...
ROYAL STRAWBERRY MUFFINS!
{adapted from People Magazine}
1 cup fresh strawberries cut into small cubes
1 squeeze lemon juice
1 cup flour
1/2 c sugar
1 tsp baking powder
1/4 c vegetable oil
1/3 cup sour cream
1 tsp vanilla
1 large egg
1 tsp powdered sugar {or more, wink wink} for dusting
Dice the strawberries and spritz with the lemon juice.
Sift together flour, sugar, and baking powder.
In a separate bowl mix the oil, sour cream, vanilla and egg until well blended.
Slowly stir in dry ingredients and completely mix through.
Stir in the strawberries.
Line 12 muffin cups or 24 mini muffin cups.
Fill 2/3 of the way full with batter.
{I like to use an ice cream scoop to make them all the exact same size.}
Bake at 400 degrees for 12-14 minutes.
Bake until toothpick comes out clean.
Allow to cool on a cooling rack.
Dust the tops with powdered sugar.
Put on your royal crown and inhale.
If it's good enough for them, then it's good enough for me.
